The Yuzamashi also known as a water cooler is a tea service accessory to adjust the water temperature. If you enjoy high-quality Japanese green tea, the Yuzamashi is very important.
When brewing Sencha or Genmaicha, pour boiled water into the Yuzamashi, then as it cools down pour the water into the Kyusu (teapot). By doing this, the water will become the ideal temperature for brewing Sencha or Genmaicha, 176F (80C).
When brewing Gyokuro, pour boiled water into the Yyunomi (teacup), then pour the water into the Yuzamashi. Finally, pour the water into the Kyusu. The water will become the ideal temperature for brewing Gyokuro, 158F (70C).
Tokoname-yaki 常滑焼 is one of the six oldest kilns in Japan, a city of pottery steeped in history with a history of over 1000 years. Tokoname-ware is a form of ceramic pottery that is produced in the area around the city of Tokoname in Aichi prefecture. This traditional craft comes from one of the Six Ancient Kilns of Japan.
